My personal favorite way of cooking this is to first coat it in batter before deep-frying it, then stew it together with ginger, scallion, eggplant, soy sauce and oyster sauce. It will be one of the best dishes you can make at home. Just so tasty. Some like to make oyster omelette with this, but it is all up to your creativity. Believe it or not, researches have shown it can even help you lose weight because they are low in calories and fat ... "Hmmmph why have I been working out when someone can lose weight by just eating oysters?" Oh and I forgot to mention, good source of protein of course.
